Homemade Chocolate Chip Cookie Ice Cream Sandwiches
Because you should eat cookies everyday.
Well, maybe not everyday.
Okay, everyday.
My weakness is a delicious homemade chocolate chip cookie. Especially from my favorite recipe, featured in my cookbook, Real Food. Real Kitchen. So Good! I call them The World’s Most Amazing Dark Chocolate Chip Cookie with Sea Salt.
Longest. Name. Ever.
But oh so deserving of it.
For my hubby’s birthday this year, I made these instead of a cake. He might have preferred the Texas sheet cake that I always make, but these sounded so good at the time.
He survived.
I made the cookies a day ahead and once they had reached room temperature, I put the ones that I had not accidentally eaten in an airtight container and put them in the fridge.
There were only three. Just kidding. Four. Kidding again.
In all honesty, there definitely weren’t as many that made it into the fridge that made it out of the oven.
I make no apologies. And I did it when nobody was home so I didn’t have to explain why I could eat them and my family couldn’t. That’s just rude.
Genius.
When it was time to enjoy these amazing bites of heaven on earth, I scooped vanilla bean ice cream (you should try the recipe from my cookbook-delish) on one cookie – the top of the cookie, then took another cookie and placed the bottom of the cookie on the ice cream and smashed it down a bit.
Oh wow, these were so good! They taste nothing like what you’d buy in the store and I mean that in a good way.
Home made chocolate chip cookies. Home made ice cream – or even an awesome organic ice cream from the store with minimal ingredients (like less than 5) – and you have such a delicious and healthy treat. So much healthier than buying these at the store. Don’t believe me? Next time you’re at the store, look at a box of ice cream sandwiches and tell me what ingredients you see. It will probably be something like this…
Non-fat milk, sugar, bleached wheat flour, corn syrup, cream, corn syrup solids, whey, palm oil, caramel color, dextrose, baking soda, cocoa, high fructose corn syrup, modified corn starch, salt, soy lecithin, mon and diglycerides, locust bean gum, guar gum, natural and artificial flavor, vitamin A palmitate, carrageenan.
Especially if you were buying the Klondike brand. Specifically Klondike Sandwiches with Artificially Flavored Vanilla Light* Ice Cream Between Two Chocolate Wafers.
Hmmmm.
Not healthy. Nor is it anything I want in my body.
So, if you have my cookbook, you can use the amazing recipe found in there or you can grab your favorite recipe that your family loves and try these delicious treats at home. If you don’t have a go-to recipe, check out my TREATS: AMAZING DELICIOUS SWEETS board on Pinterest. There are plenty of recipes there you could try. Not all list healthy ingredients, but I just tweek them and use healthier ingredients to make them better and usually it makes them more delicious too. Easy peasy lemon squeezy!
A couple notes: The cookie on the bottom should have the top of the cookie on the inside of the sandwich which makes it less messy since the chips are usually all piled on the top. This way, you don’t get too chocolately. You’ll still be a mess, don’t get me wrong, but just not as messy! And make sure the ice cream is straight out of the freezer. Soft ice cream becomes liquid pretty fast. You want hard, frozen ice cream. You can also premake these, wrap them in wax paper or parchment paper, put inside a ziploc bag and put them in the freezer.
