Egg Muffin Cup Perfection
Move over Egg McMuffin. You’ve got nothing on me.
I’m a firm believer that McDonalds offers no healthy menu options. No matter what their marketing team says.
I also know that so many people out there like the taste of their breakfast sandwiches. Or maybe it’s the convenience that makes it taste good. Whatever the reason, Egg McMuffins are pretty popular.
BUT…why not skip the fake food, terrible fats, white breads and make your own?
Yes, make your own. They taste sooooo good. You won’t regret it. I promise.
These are simple. Amazingly simple, yet they deliver a punch of yumminess that you can’t get from a drive thru window!
Crispy Bacon Egg Muffin Perfection
What You’ll Need:
– 14 pieces of bacon (your choice, but make sure it’s clean meat from a pasture raised animal)
– 12 eggs, pasture-raised and organic
– 1 cup cheese of choice (parmesan, cheddar, mozzarella), I like raw sharp cheddar
– Sea Salt to season
– Black Pepper to season
– Optional additions: chives, green onions
What You’ll Do:
1. Precook bacon so it’s cooked through, but still bendable.
2. Preheat oven to 400 F.
3. Using a muffin tray, line each cup by wrapping bacon on the sides of the cup.
4. Using the 2 extra slices of bacon, break off pieces small enough to fit on the bottom of each cup.
5. Once all cups are lined with bacon, place in the oven for 5 minutes so the bacon can get crispy. Keep an eye on it – it may take less or more time depending on how your oven heats up.
6. Once bacon is crispy, remove from the oven and crack and place one egg in each bacon-lined cup.
7. Top with salt, pepper and any additional items (such as herbs or green onions).
8. Top it all off with your shredded cheese.
9. Place in the oven and bake for approximately 15 more minutes – until cheese is melted and eggs are firm. It may take a tad longer.
10. Remove from oven and loosen with a knife to remove from the muffin cups.
11. Serve warm – alone or with toasted sourdough bread.
12. Sit back and smile. This is good stuff!
* If you prefer this to be meatless, omit the bacon and grease the muffin cups with coconut oil or butter and just do the eggs, herbs, onions and cheese!
