Mini Guacburger Sliders & A Secret
Now that spring is in full swing, I’ve been back in the kitchen a little more. And my craft room. And I’ve been organizing a little more. And deep cleaning every room of my house.
There’s something about winter in Colorado that gets you in a warm and cozy mode of watching movies, drinking hot cocoa and playing out in the snow. Not leaving much time for taking care of things around the house, including all those unfinished projects. Where eating chili, soup and stews make up most of your meals and creativity can sometimes come to a halt!
Ahhh, but spring is here! Windows are open, cookbooks are open and the creativity is flowing again!
So, with warm evenings where we can grill and eat outside with the Rocky Mountains as our view – I made these delicious Mini Guacburger Sliders that were a hit with everyone! Even the kids! Can you say score?! I’ve also been trying out some new slow cooker meals for my busy nights of running the kids 25 miles away to their Tae Kwon Do classes. Throw in a couple DIY skin care experiments, organizing my guest room after a year and a half after moving into this house. I admit, I was inspired by some wonderful resources that I recently got a hold of – but how amazing it is that such a small investment can make such a huge change. This bundle of resources will soon be available to the public (and is amazingly affordable) and I know you will definitely want to get your hands on! I’ll let you know more about that soon! I wish I could tell you now, because it’s that awesome, but I’ll tell you more about it early next week!
Until then, try out these delish sliders and enjoy them on your patio with the sun shining on your face!
Mini Guacburger Sliders
– 1 pound ground beef (grass-fed is best)
– 1/3 cup grated parmesan cheese
– 3 avocados
– 4 roma tomatoes, diced
– cheddar cheese slices, each slice split into 4 squares
– seasoning for the meat (my go to is sea salt, ground pepper, garlic powder, onion powder, chipotle pepper flakes)
– seasoning for the guacamole (my go to is sea salt, ground pepper, garlic powder, onion powder, diced tomatoes, approx 1 tsp lemon juice and approx 1/2 tsp lime juice)
– slider buns (we used pretzel ones this time around)
– condiments of your choice (mayo, ketchup, mustard, bbq sauce, ranch dressing, etc.)
What You Do:
1. Bring beef to room temp! Grass-fed beef cooks better at room temp and allows for a more tender and flavorful meat.
2. Prepare the guacamole by removing the skin and pits of the avocados, mash them in a bowl and add seasoning. I included the seasonings we like to use above, but feel free to use what your family likes best. If you want to try what I use, I just do some quick shakes of each seasoning, stir and test. Add more to taste if needed. Next add the lemon juice and lime juice. Then add the diced tomatoes last – using one of the Roma’s should be enough.
3. Slice the remaining tomatoes into thin, whole slices.
4. To prepare the meat, place in a glass bowl and add seasonings and the parmesan cheese. Mix thoroughly – using your hands will incorporate the best.
5. Make mini patties by rolling portions of the beef into balls a little larger than a golf ball. Flatten them with the palm of your hand.
6. Grill the patties and place a square of the cheddar cheese on each one 2 minutes before you remove them from the grill.
7. During the last 5 minutes of the burgers being grilled, place the buns, flat side down, on the grill and warm them up a bit. They also get a tad toasted which is a nice touch.
8. To assemble once everything is done cooking and warming, place a patty on a bun, top with a tomato slice and a spoonful of guacamole and any other condiments you want to add*. Place the top bun on, smash it down a bit so your mouth can fit around it – and you’re ready to go!
*we noticed that when you use the guacamole, it definitely removes the possibility of dryness happening, which is always a good thing
So, the next time you’ll be grilling, be sure to try these out! They are filling and great portion sizes as well. They are also good for any little hands you may have eating with you! Go ahead and add some pickles and sweet potato chips or fries to make this meal a favorite in your home too!
